Job description

West Lexham is undergoing an exciting expansion, building a brand-new timber frame kitchen space and bringing food in-house. We will be working directly with biodynamic growers on-site, a large wood-fired oven and a purpose-built kitchen to create a farm-to-fork offering for all our guests.

We are based in Norfolk, surrounded by a plethora of other great growers and producers, and this is a great opportunity to work with and present the best of Norfolk on a plate, using techniques varying from cooking with fire to fermentation.  

Who we are looking for?

We are looking for experienced and creative chefs, with minimum 2 years professional experience and a special interest in working with seasonal, sustainable ingredients to help create a varied, delicious and mostly vegetable-led menu for our guests throughout the year.

This is a great opportunity for chefs wanting to work more directly with produce and producers, whilst also developing their kitchen management skills and influencing menus. Development of the kitchen and our food will be team-led, so we’re looking for people who are engaged, creative and communicative.

A love of food and cooking, as well as a proactive and highly organised approach to work are essential qualities, and our kitchen ethos will be one of calm, friendliness, collaboration and creativity.

For this role, we are specifically looking for someone to work alongside the Head Chef in helping to manage the team and develop the menu and processes.

Key Responsibilities

  • Work alongside the Head Chef in managing the team and developing menus
  • Work with our Head Chef and growers in selecting what we’re growing
  • To prepare and help oversee preparation of food to high standards
  • To help ensure food is seasonal, of known provenance and sourced locally, where possible
  • To lead service and the team in the absence of the Head Chef
  • Work on helping to build our own pantry of preserves, pickles, ferments etc

Who we are

West Lexham is an eco-retreat centre set in a beautiful river valley in Norfolk. It is one of the top boutique glamping locations in the country. The 22-acre site encompasses 6 beautiful treehouses, 7 luxury bell tents and 20 exquisitely designed rooms crafted using upcycled materials.

We have scenic gardens featuring every single species of native tree and shrub from across the UK and there is a beautiful lake surrounding the manor house, perfect for wild swimming and boating and one of the most biodiverse chalk streams in England. There is also a swimming pool, a hot tub, a sauna and a natural water treatment plant. The whole site is heated with biomass boiler and with a sizable solar array, we are currently able to operate at around 90% on renewable energy.  We aim to be a rural idyll, with a focus on sustainability, ethics and wellbeing that extends both to our guests and our staff.

Currently West Lexham is closed (due to the pandemic) and we are taking the opportunity to build 3 new event spaces and a new Garden Kitchen.

This will be run by our Head Chef Adam Bernstein, and in conjunction with our head grower Lucy Birnie, with a focus on seasonality, locality, fermentation and vegetable-led menus.
