Job description

Daylesford Organic's Creamery is the heart of our farm’s dairy craft. Fresh, organic milk from our pedigree British Friesian and rare‑breed Gloucester herds travels only a few metres before it’s transformed by our expert team into our Award-winning range of organic cheeses, yoghurts, kefir, butter, and buttermilk.

Every drop of milk is used with intention, ensuring sustainability and zero waste remain central to the Creamery’s philosophy. It’s small‑scale, artisan craftsmanship at its finest, shaped by the natural rhythms of the herd, the seasons, and the land.

ABOUT THE ROLE

The Trainee Cheesemaker plays a hands-on role in bringing the full range of Daylesford Organic cheeses to life: from soft and creamy styles to hard, blue, and beautifully rind-washed varieties. Working closely with the Creamery Quality & Operations Manager (and stepping in when they’re away), this role supports every stage of our artisan cheesemaking process.

Beyond learning the art of Cheesemaking, the Trainee Cheesemaker also contributes to crafting the other delicious, organically certified products made in our Creamery, including yoghurt, kefir, butter, buttermilk, and fresh milk. It’s an opportunity to learn, create, and help shape exceptional organic dairy from start to finish.

YOUR RESPONSIBILITIES

Cheesemaking & Dairy Production

  • Produce all Daylesford Organic cheeses to agreed specifications and maintain consistent quality.
  • Support the creation of other Creamery products, including yoghurt, kefir, butter, buttermilk, and milk.
  • Manage and care for maturing cheeses, ensuring correct handling and readiness for dispatch.
  • Carry out pasteurisation and CIP processes independently.
  • Assist in developing new products and innovations for future ranges.

Quality, Standards & Compliance

  • Uphold Soil Association organic standards across all production activities.
  • Follow due diligence and traceability procedures accurately.
  • Maintain high production standards with minimal wastage.
  • Contribute towards achieving the award‑winning quality expected of all Daylesford products.
  • Support internal and external audit requirements.

Operations, Efficiency & Teamwork

  • Manage stock levels to ensure smooth, uninterrupted supply.
  • Complete all preparation, production, and dispatch tasks on time and to a professional standard.
  • Work efficiently to meet daily order fulfilment targets of 98% or higher.
  • Communicate effectively within the team regarding recipe changes, operational updates, and quality issues.
  • Deputise for the Creamery Quality & Operations Manager when required.
  • Assist in meeting annual financial and budgetary targets.
