Wild IS Earth (WISE) – Kitchen Residency Opportunity

Location: Kentish Town, London

Wild IS Earth is a kombucha microbrewery and creative community space in Kentish Town, and we are looking for a wild food–aligned chef to take over and run the kitchen as their own independent food concept.

This is a kitchen residency opportunity for an entrepreneurial chef who wants to build their own food offering inside an existing venue while collaborating under a shared ethos of fermentation, sustainability and seasonal cooking.

Wild IS Earth already attracts a community interested in organic, plant-forward, fermentation-driven food and drink, and the kitchen partner will have the opportunity to develop their own identity within this ecosystem.

The Model

The kitchen partner operates their own food business within Wild IS Earth.

• You run your own food concept and menu

• You manage your own suppliers and food revenue

• You rent the kitchen space for agreed hours

• We collaborate creatively and commercially

• Both businesses grow side-by-side under a shared ethos

This is not a job, but an opportunity to build your own venture within an existing hospitality space.

Wild IS Earth focuses on kombucha production, drinks and events, while the kitchen partner focuses on food.

The Opportunity

You take over the day-to-day kitchen operations while I focus on kombucha brewing, the bar and events.

You will:

• Run your own seasonal food menu

• Operate the kitchen during agreed service hours

• Collaborate on special events, tastings and dinners

• Help shape a unique food and fermentation destination in London

Current opening hours are:

Thursdays: 12pm – 11pm Fridays: 4pm – 11pm

We also host Aperitivo nights, tastings, workshops and creative events, and with the right partner we plan to expand opening days Wednesday through Sunday.

Trial Structure

A 1–3 month trial period allows us to explore the collaboration and ensure the rhythm works well for both sides.

Two possible arrangements are available depending on the chef’s set-up:

Hourly kitchen use – £120 per hour Suitable for chefs who already have an external production kitchen and only need to finish, plate or serve food during opening hours.

Monthly trial residency – from £3,000 per month For chefs who wish to operate the kitchen more regularly and develop a food concept within Wild IS Earth.

This flexible structure allows both parties to explore the partnership before committing to a longer-term residency.

• Kombucha brewed on site

• Mushrooms grown on spent tea

• SCOBY transformed into food and biomaterials

• Low-waste, organic and seasonal ingredients

The space also has deep local roots — it was a family-run Italian patisserie for 36 years, and I am now evolving it into a next-generation fermentation space.

Together, the aim is to create something truly unique to Kentish Town and London — a place where fermentation, wild food and creative hospitality meet.

 

What I’m Looking For

A chef who resonates with:

• Wild and foraged ingredients, including mushrooms

• Seasonal, wholefood cooking

• Fermentation techniques (koji, miso, lacto-ferments, sourdough etc.)

• Sustainable and low-waste kitchens

• Creative and experimental food ideas

• Community-driven dining experiences

Most importantly, someone with entrepreneurial drive who wants to build their own concept within a collaborative environment.

Your Role as Kitchen Partner

You would:

• Take full ownership of kitchen operations

• Develop and run your own menu and food concept

• Manage sourcing, prep, staffing and hygiene

• Operate independently while collaborating on events and experiences
