Wild IS Earth — Botanical Bar Lead / Mixologist

Location: Kentish Town, London

Hours: Part-time / regular shifts to start, with room to grow

Pay: From £15 per hour, depending on experience

Ideal: Confident cocktail experience, strong bar systems, clean working style and genuine interest in botanical, fermentation-led drinks

Wild IS Earth is a London kombucha microbrewery, botanical bar and closed-loop fermentation space in Kentish Town.

We serve small-batch live kombucha on tap and in reusable 330ml bottles, alongside botanical kocktails, booch mocktails, European low-intervention wines, UK craft beers and organic plant-based aperitivo bites. Rooted in circular practice, we transform spent tea into mushrooms and surplus SCOBY into biomaterials for art, design and experimental food.

A home for fermentation, creativity and community.

We are now looking for a competent, capable and creative mixologist / bar lead to help operate and grow the WISE Bar along with our new opening hours.

This role is for someone who can confidently run the bar, hold the space, manage service flow, maintain high standards, and bring care, flavour and presence into a small but ambitious venue.

The Role

You will work closely with Livia and the team to run the bar during service, prepare drinks, manage stock, support opening and closing systems, and help shape the drinks experience as Wild IS Earth grows.

You will be working with:

  • Kombucha on tap
  • Botanical kocktails
  • Booch mocktails
  • Seasonal syrups, shrubs, infusions and herbal elixirs
  • Low-intervention wines
  • UK independent craft beers
  • Alternative hot and iced drinks
  • Plant-based aperitivo pairings
  • Fermentation-led flavours and experimental drinks

This is not a standard bar job. It is a small, living, evolving space where cleanliness, confidence, atmosphere, flavour and care really matter.

What We’re Looking For

We’re looking for someone who is:

  • Confident making cocktails and mocktails
  • Capable of running the bar solo when needed
  • Clean, organised and detail-oriented
  • Calm under pressure
  • Warm, grounded and good with people
  • Reliable and punctual
  • Comfortable with prep, stock, tills, cleaning and service flow
  • Interested in fermentation, botanicals, herbs, flavour and sustainability
  • Able to contribute ideas while respecting existing systems
  • Capable of helping the bar feel professional, smooth and welcoming

Experience with cocktails is essential. Experience with fermentation, herbal drinks, foraging, natural wines or low-waste hospitality is a strong bonus.

Most importantly, I’m looking for someone capable — someone who can step in, understand the rhythm, take responsibility and grow with the space.

Responsibilities

You will be involved in:

  • Preparing and serving the WISE drinks menu
  • Making botanical kocktails and booch mocktails to spec
  • Supporting drinks development and seasonal specials
  • Preparing syrups, garnishes, infusions and bar prep
  • Managing bar cleanliness and organisation
  • Opening and closing the bar
  • Handling stock checks and restocking
  • Supporting customer experience and atmosphere
  • Working alongside kitchen, events and tasting sessions
  • Helping create a calm, beautiful and intentional bar culture

Current Opening Hours

Wild IS Earth has recently expanded its hours to:

Wednesday, Thursday, Friday | 4pm – 11pm Saturday | 12pm – 11:30pm

We also host kombucha tastings, aperitivo evenings, workshops, private mezzanine hire and creative events.

Shifts will be agreed depending on availability, experience and the needs of the space.

What Makes This Different

Wild IS Earth is not a traditional bar.

It is a working kombucha microbrewery, botanical bar and creative fermentation space with a growing closed-loop ecosystem:

  • Kombucha brewed on site
  • Botanical drinks developed in-house
  • Mushrooms grown on spent tea
  • SCOBY transformed into food and biomaterials
  • Organic and seasonal ingredients
  • Creative events, tastings and collaborations
  • A former family-run Italian patisserie evolving into a next-generation fermentation space

The bar is central to the whole experience. It needs someone who understands not just drinks, but rhythm, feeling, flow and care.

Who This Would Suit

This role would suit a skilled bartender, mixologist or bar lead who wants to be part of a creative, independent, fermentation-led venue.

You might come from cocktail bars, natural wine bars, creative hospitality, events, supper clubs or independent restaurants but you should be ready for something intimate, hands-on and evolving.

You should be practical, reliable, emotionally intelligent and able to work independently.
