Job description

Balsbury Grocer is a new and exciting retail and café space in the heart of a large and vibrant community, near Glastonbury. We are looking for front of house, kitchen and bakery teams to join our start up as we open in Spring 2020. More detailed information about the space is available.

Currently the kitchen and bakery roles can be a little flexible as it’s more important for us to find the right people. We are looking for a diverse range of team members who are excited to be involved in a young business and who can show their enthusiasm in a new venture, curiosity to learn, enjoyment in making all of our customers feel welcome and willingness to share new thoughts and ideas to keep the business responsive to customers and their requirements.

In the kitchen we are looking for a light, modern style using local suppliers and seasonal produce where ever possible. There may be some old favourites that are always available, but they will be offered alongside weekly and seasonal changes, and a wider menu available at weekends. Some of our inspirations come from chefs with international and Asian / Australian influences, eg. Ottolenghi, Bill Granger, Baker and Spice, Dean Brettschneider.

We are planning for ‘deli’ style food to be available during opening hours, where it can be easily plated and served by the front of house teams. That will include some lovely salads and cold ‘lunch’ offerings, eg. quiches, tarts etc. Also, of course, cakes and sweet treats to accompany great coffee.

The short order kitchen will serve a contemporary brunch and lunch menu from 8am-2pm, seven days a week. And will include things like the classic avocado on toast, alongside pancakes and waffles, Shakshuka etc. We expect to offer a wider range for weekend brunches and a simpler week day menu.

There is also the possibility of occasional ‘pop-up’ evenings which may feature guest chefs, or one-off menus, but any evening work will be discussed with the team first.

Head of Kitchen / Head Chef / Head Baker

Key to the team is a special individual who would like to get their hands on the kitchen and be excited to see it grown and evolve within the overall business. It might be someone thinking about opening their own place in a few years’ time, or perhaps someone looking to come out of a more intense and pressured environment to a more wholesome space but maintaining high quality standards and the ability to try new ideas and work independently.

They might be able to take care for the whole kitchen, or perhaps specialise in either being Head Chef or Head Baker, in that case, able to work closely with their counterpart. This could be an amazing opportunity for someone keen to expand and grow a business, building the foundations for their own aspirations, in addition to 'just' running a kitchen.

Kitchen and bakery team

We are looking to put together a team of full-time and part-time staff to manage and run the kitchen and bakery, some of the activities will include:

  • Preparing and making food for ‘deli’ counter, all-day service, eg salads, sausage rolls, quiches, etc
  • Preparing and making cakes and sweet treats for the all-day menu
  • Short order kitchen staff from 8am – 2pm preparing and making light ‘brunch and lunch’ menus
  • Baking team, baking seven days a week, with a variety of contemporary breads
  • Baking to include laminated doughs, viennoiserie and pastry
  • Regular cleaning of the kitchen space, complying with, and obtaining the highest level of, health and hygiene regulations and approvals
  • Liaising with front of house staff through service and beyond to plan menus and recipes
  • Customer service, being able to support front of house staff when dealing with any queries and complaints
  • Providing a good understanding of allergies and specific food requests
  • Ensuring the relationships among staff and suppliers is a positive one

Additionally, there are some supervisory / management roles for some team members:

  • Opening and closing the kitchen with all daily checks and paperwork completed comprehensively
  • Menu and recipe development
  • Ensuring all food safety and hygiene processes are adhered to
  • Shift management for team members
  • Sourcing, building and maintaining relationships with suppliers
  • Stock management, keeping kitchen stock full and well managed to minimise waste and consider all aspects of sustainability
  • Liaising with gardeners to keep links between kitchen and garden

We’d like to find people who:

  • Have a lot of love for the kitchen and great food
  • Enjoy working independently
  • Ideally can work early (7am opening) (though there is some flexibility for some team members), though rarely in the evening
  • Punctual, reliable and organised
  • Fast and keen learner, happy to ask questions
  • Task focused
  • Ready to get ‘stuck in’, showing responsiveness and flexibility when needed
  • Want to contribute to building a strong and supportive team, and with a great attitude with people from all walks of life

Balsbury Grocer is a new start-up venture in Baltonsborough, a large and active village near Glastonbury. It will be at the heart of the village and peoples' daily lives and also a destination for the wider area. At the core we will have a bakery and cafe set in a village and farm shop where people can pop in for a pint of milk, stay for a chat and coffee , come for a lovely local lunch, and buy fresh local ingredients to take home.
