Job description

Our newest site, set to open its doors in April, is housed within an old Sorting Office on Ecclesall Road.  At Marmadukes, we are well known for our speciality coffee, exceptional food, delicious cakes & warm, welcoming staff, but in our new location, we are expanding on this with our own on site sourdough bakery. We aim to produce the highest quality, nutritious sourdough bread & viennoiserie products using sustainably sourced grains. 

The Role

We are looking for a Head Sourdough Baker who, working closely with the Bakery Manager & business owner, is able to develop new bakery recipes to form our signature sourdough bread & viennoiserie range, & to execute these with quality & consistency. The bake range is to be naturally leavened, wholesome & nutritious, with an emphasis on long fermentation, hand-shaping & mindful ingredient sourcing. A knowledge of laminated doughs is essential, as the bakery is to produce croissants & other morning pastries daily.  Our baked goods will feature on our cafe menus, so regular discussion with our Executive Chef will also be important. This role is a truly exciting one for experienced bread enthusiasts, with the opportunity to really impart character & creativity into the bakes produced. It goes without saying that all aspects of the active bread production from creating a production plan, to sourdough starter maintenance/mixing/scaling/shaping/baking & fulfilling order quantities will also fall within the Head Sourdough Baker’s remit.

We are thrilled to be working with Wild Farmed Grain to both create nutritionally complex & flavourful bakes, & to educate on the importance of biodiversity & environmentally sound food choices. As such, we are keen to find a Head Sourdough Baker who shares in these core values, & who more broadly has a genuine (borderline obsessive) passion for food & drink. 

Leadership skills & managerial experience are essential prerequisites for the role. Our bakery team is made up of highly skilled, committed individuals with a true passion for all things baked.  The team is close-knit & incredibly supportive, so we welcome applicants who are keen to share their knowledge & also learn from their colleagues. The Head Sourdough Baker will be expected to encourage, train & organise the team, including maintaining health & safety standards & necessary records. 

Job Requirements 

  • Minimum 3 years sourdough bread experience

  • Extensive experience in laminated & enriched doughs

  • Ability to develop, execute & teach new recipes 

  • An experienced, conscientious team leader 

  • Driven & passionate about producing consistent, quality long fermented sourdough

  • Someone committed to professional growth; refining & developing skills, welcoming of new projects

  • An early riser! Our bread will be baked in the morning.

  • Someone who is genuinely excited about sourdough, food sustainability & building relationships with millers/suppliers.

  • Organised & able to maintain records

  • Ability to lift up to 25 kg
