Job description

The Commercial Lead will be responsible for managing the bakery, its staff, commercial opportunities, quality of product and retail.  This role requires sound retail experience and business acumen, preferably within the catering/restaurant industry.  The candidate will be responsible for all systems and processes (back office and front) that will enable us to grow to agreed revenue targets.

An essential requirement is for the Commercial Lead to be a flexible individual whose focus will be on the success of the bakery in terms of its commercial vision and is supportive of its work with trainees.  You will need to be someone with a ‘can do’ approach.  You will have close working relationships with the charity’s Director, the Lead Baker and the Social Enterprise Manager as well as trainees and volunteers working in the bakery.

Main Duties

  • Operational responsibilities
    • Ordering stock and equipment maintenance
    • Oversee production and contribute to smooth team communication through huddles and team meetings
    • Coordinating delivery logistics and management of our retail outlet
    • Accounting responsibilities including creation of invoices, inputting bills and cash accounting
  • Organisational responsibilities
    • Develop processes and update ISO documentation, recruit and line manage lead baker, bakers, front of house and market stall teams
    • Monitor and balance the needs of the business with the needs of the trainee programme
    • Uphold culture and values of the organisation
  • Oversee quality and customer service
    • Monitor and uphold standards of quality for customer service and products we produce
  • Develop and drive sales strategies to meet enterprise targets
    • Develop and maintain wholesale customer relationships, on-boarding new customers and related accounting processes
    • New business development both on the retail and wholesale sections
    • Monitor profitability figures, product pricing and control costs including waste

This is a full time post 40hrs p/week (inclusive of 5 hrs break) some weekend work.  The bakery operates 7 days a week, open to the public Tues-Sat.Sun.
